Recipe of the Month – Elk Tenderloin

  • 1 elk tenderoin
  • steak seasoning
  • garlic salt
  • olive oil
  • 1 onion
  • 8 tablespoons butter
  • 1 cup whiskey
  • 1 cup beef broth
  • 1/2 cup heavy whipping cream
  • 1/4 teaspoon garlic powder
  • salt & pepper



  • Drizzle olive oil over tenderloin
  • Rub spices on meat to your liking
  • Preheat grill and cook meat for about 7 minutes on each side or until done
  • spoon on extra spices and oil from bottom of the dish during cooking



  • Caramelize onions in pan with butter
  • Once onions are translucent turn down heat and add whiskey
  • Allow to simmer until half of mix evaporates
  • Add beef broth and allow to simmer and thicken
  • Stir in heavy whipping cream and allow it to continue to bubble
  • sprinkle with salt and pepper


Cut meat against the grain and drizzle sauce over the meat and serve.
